I loved apricot log rolls when I was little. Being raised by a fairly health-conscious mother we rarely had sweets or chocolate so these little delights were a big treat for us.
After making these for my family this week, I can’t believe how similar they are in taste to my childhood ones nor how easy they were to make. With not a scrap of added sugar and plenty of added healthy bits I love that my children are devouring them and my husband is enjoying snacking on them for a quick energy boost.
I highly recommend having a stash of these in the freezer at all times. They keep forever and are great to have on hand for a when hunger strikes. We made logs but your could do balls or bites or whatever takes your fancy.

1 Cup pitted dates (I used fresh medjool but could use dried instead)
1 Cup dried apricots
1/2 Cup Desiccated Coconut
1/2 Cup rolled oats
1/4 Cup milk powder
2 Tbns LSA (Linseed, Sunflower and Almond meal)
2 Tbns Boiling Water
Extra desiccated coconut for rolling
Method (Here’s the clincher)
Put all ingredients into the food processor and process until mixture is smooth and comes together in a ball – It really is THAT easy!
Now use your play dough skills to roll teaspoons of the mixture into logs (my children loved doing this part) and then roll them gently in the extra coconut. Place them in a freezer proof container and pop them in the freezer.
That’s it! Done!
What could I replace the oats with to be gluten free, and also we don’t really use milk powder in NZ . Thanks

You could definitely skip the milk powder. The oats could be replaced with almond meal or maybe coconut flour or you could even just increase the LSA quantity. Anything dry that will balance it would substitute fine.
